Got bored today and made these little pockets for the kids. Chicken, broccoli, cheese and a cream sauce with flaky crust. Homemade hot pockets I guess lol.
What kind of crust did you use? It looks like filo dough but betttttter

It's a simple recipe that I use when I make pasties. which are kind of a regional dish here in The upper Peninsula. It's similar to that of a pie crust.
Crescent rolls can be substituted if you don't have the time. Below is a picture of a pasty so you have an idea what they are. It's just a random pic I found online since I haven't made them in a while.

I FUCKING LOVE EMPENADAS

They are very similar to empenadas. Pasties are generally quite large and are filled with steak or hamburger, pork, carrots, potatoes, onion and rutabagas. Big meat and veggie pies. Most people cover them in gravy or eat em with ketchup.
 
My mom makes these delicious homemade marsh mellows its basically just cornstarch that you whip for like 15 mins then slowly add confectionery sugar.
 
I have a friend who really likes Red Velvet Cupcakes. This was my first time baking in over 2 months... kitchen is still in shambles but for the first run with the oven I wanted to do something special.

So here it is. They didn't rise as much as I had expected... first time ever making these cupcakes. And the frosting is kind of ugly. It's tough when you don't have a piping bag or offset spatula.

Still. Felt good to get back in the game.

My family had prime rib for dinner. Not the best photos but yeah... kinda hard to do when you're eating off of paper plates. We don't even have a kitchen table lol.

Can't wait until things are back to normal.

Tried my hand at making a japanese custard pudding... kind of a creme caramel... based off of this Cooking with Dog recipe. I really like his show... the funny voice was odd at first but it's grown to be one of my favorites.


At any rate, I couldn't find real ramekins so I had to use some smaller dishes. It came out pretty good but I let the caramel go a little too far.

It doesn't help when you have nothing but bulky plastic utensils either when trying to get the pudding out of the mold. Oh well. It's still great to cook and bake again.

Come on you guys. I'm sure you have some awesome holiday creations to share too.

That is a lot of food. What is wrapped up in the crescent rolls in the nearside right corner? I see pigs in a blanket farther down hmm.

And please tell me thats a giant pile of hummus surrounded by the crackers.
