When playing on the BLU team on my favorite server, I usually use the weapons that make the Engineer an offense class (mainly the weapons mentioned in this thread). I sometimes go Gunslinger to stop campers on Dustbowl. Otherwise, I go and use my Wrench (to get to stage 2's tunnel) and build a nest. I realize that the weapons I use seem overpowered in their own way, but they're pretty handy. I do tend to get killed often, so it's not like I'm leading my team to victory because of the weapons themselves.
