Night two of cooking for boyfriends family whilst the adults are away camping lol. I decided to make Indian Balti Pork on a bed of roasted vegetables with toasted cumin seeds on rice. It was pretty easy.
I cubed the pork and made a simple rub for it of cumin, coriander, salt, pepper, seasoning salt, mustard powder,garlic powder and Worcestershire sauce and let it sit in a bowl for 20 so mins. Pan fried the veggies ( celery, bell peppers, onions) in toasted cumin seeds and when they were caramelized put them into the bottom of a caserole dish. Then browned off the meat in the same pan and tossed that on top of the veggies. Made a quick balti sauce ( similar ingrediants to the porks spice rub plus corn starch and veggie broth. and baked it for 30-40 mins at 350'.
It came out very nicely and had a taste reminiscent to Jamaican curry lol
