Either
A. You're missing a ton of textures, delete the map and redownload it.
or
B. Your video card's ass is grass. Check the temps, replace it, run some diagnostics, whatever.
 
Well considering that my graphics card is a new (as in just over a month old) Radeon HD 6970 that hasn't had any problems with any other games I'm pretty sure (or put another way, I fervently hope) it was a purely software issue. Also, after reinstalling TF2 I haven't had any further problems.

Then, as Mod said, you were missing textures from your install.
