So, yeah, I have just started watching anime nowadays. So far, I've seen

Cowboy Bebop
Neon Genesis Evangelion (My first proper anime show - HUGE MISTAKE - this show is such a mindfuck I should have started it after watching something easier to digest)

Fullmetal Alchemist Brotherhood - I really liked this one a lot, any more great shows like this?
 
They aren't that similar to FMA:B, but I think you will still like them (except 11eyes, it doesn't even make sense)

Haven't watched it, but supposed to be pretty good. I don't like watching anime's that are longer than like 30 episodes, unless I really liked them (like FMA and Code Geass)

Yeah, nor I. FMA is the first anime I've actually bothered to watch that's over 30 episodes.

If you want lighter action stuff check out beelzebub (like 50 eps, but pretty hilariously), GetBackers (also about 50). You can pretty much go brain-dead while watching these, nor do you really have to watch them in order to understand anything.
