perfect hard boiled eggs: bring eggs to a boil, then remove from heat and put a lid on the pan and let them sit for around 12 minutes. Older eggs peel easier than fresh eggs, or add a little salt to the water before hand for easy peeling.

Ahh, that's why it's harder to peel when I don't wait..

I put a small amount of distilled white vinegar in there too.

Ahh, that's why it's harder to peel when I don't wait..
Also, instead of peeling them by hand, keep them in the pot in which you boiled them and just swing them around in it! The shell will come off pretty much by itself, even if they're a little overcooked
